Oysters 3 Ways
1 straight up
Ingredients
Native oysters
Lime
Method:
Open the native oyster by inserting a sharp point into the hinge and levering it open. Cut the oyster free from the top and bottom of the shell but leave it in the half shell. Squeeze of lime over the top and serve.
2 Battered
Ingredients
Rock Oysters
Tempura batter (see previous recipe)
Tbs Poppy seeds
Tbs Sesame seeds
Method:
Open the oyster as above. Add the poppy seeds and the sesame seeds to the batter. Drop the oysters into the batter and then straight into hot oil for 15 – 20 seconds. Serve back in their half shell with some sweet chilli dipping sauce.
3 grilled with butter mousse
Ingredients
Rock oysters
250g butter
Lemon
Lime
Tbs Garlic
Anchovies
Chilli powder
Cayenne pepper
Tbs Worchester sauce
Flat leaf parsley
Method:
Open oyster as above. Put the butter, juice and zest of a lemon and lime in a blender. Blitz for 30 seconds Then add a table spoon of chopped garlic and a few anchovies. A pinch of chilli powder and cayenne pepper. Blitz for 30 seconds. Add a handful of chopped flat leaf parsley. Blend in. Spoon mousse over the oyster in its half shell, onto a baking tray and grill for 30 seconds.
