Lemon Sole, keep it simple

Ingredients:
1 Lemon Sole
Butter
Salt
White pepper
½ lemon
Method:
With this fantastic fish the less we do the better.
Trim the fins off the outside of the fish, rub with the butter and season with the salt and pepper. Place under a grill until the skin starts to blister, turn grill down a bit so as to cook slowly.
Once cooked remove from grill and lift skin off fish, squeeze lemon over the fish and serve with new potatoes and something green.
