Duck With Barbster Potatoes

Ingredients
2 Duck breasts
Method:
Season the duck and then Pan fry skin side first. Once cooked allow to relax for a few minutes before slicing.
Barbster potatoes
New potatoes
2 red onions
Garlic cloves
Olives – black and green
Thyme
Cherry tomatoes
Quarter the new potatoes, chop the onions, and add a splash of olive oil then the whole garlic cloves and a handful of black and green olives. Sprinkle in some thyme. Cook until the potatoes are just soft. Add a handful of cherry tomatoes and cook for about 30 seconds more.
